Glowing Sushi by Center For Genomic Gastronomy is part of the project “Futurs non conformes. #2 Passages à l’acte” for the Jeu de Paume virtual space.

Americans consume the products of genetically modified organisms in industrially produced soda and cheese everyday, but the genetically modified organisms we eat are usually invisible. Glowing Sushi makes the eating of GMOs a very visible act, creating a prompt for viewers to consider and debate what is innovative and acceptable within the life sciences. Is inserting a transgene innovative? Is taking transgenic fish out of the lab and selling them innovative? Is marketing them as pets innovative? Is selling a pet fish with terms of service innovative? Is eating them innovative?
The Center for Genomic Gastronomy’s culinary performances give rises to a debate that is nourished by the tasting of some highly controversial foodstuffs.

Center For Genomic Gastronomy

The Center for Genomic Gastronomy est un groupe de réflexion mené par des artistes qui examine les biotechnologies et la biodiversité des systèmes d’alimentation humaine. Sa mission est de cartographier les controverses alimentaires, modéliser des prototypes de futurs culinaires alternatifs et d’imaginer un système alimentaire plus juste, bio diversifié et qualitatif. Le Centre présente ses recherches à travers des conférences publiques, des publications de recherche, des repas et des expositions. Depuis 2010, le Centre a mené des recherches et exposé en Europe, en Asie et en Amérique du Nord. Il collabore avec des scientifiques, chefs, hackers et agriculteurs.
